 食べる際のご注意 原木椎茸は森の中に置いた木から椎茸を栽培する方法です。
気をつけて取り除いておりますが、万が一椎茸の軸に木片などが付いている場合は食べないようお気をつけください。


干し椎茸100gってどれくらいの分量?

100g あたり、干し椎茸カットが約80~120個くらいの分量です。
大人の手の一掴みで10g、1食1~2人分のスープに使っていただくイメージです。
たっぷり目であれば1人10食分くらいの分量、他にも具材を使う場合は1人20食分で100gほどとなります。


味の分類について

香りはやわらかく、味わいは甘めのブレンドです。
下記の種類の椎茸菌種が入っています。

■ 115
日本きのこセンターの代表的な菌種。亀裂が入り山脈のようにボコボコした傘が特徴で、山それぞれの上部に雪が積もったように白くなっています。肉厚で主にステーキ椎茸などに用いられます。
115菌種のブランド椎茸は多く、1個3万円を超す「のとてまり」や鳥取「茸王」などはこちらの菌種と同じ。食べたときの食感や香りが良く焼いて食べるのがおすすめです。

■ 240
椎茸祭的にイチオシの椎茸菌種。岩のようにゴツゴツした表面で黒っぽい色をしています。やわらかで甘い香りが特徴で、ある意味椎茸らしくありません。なので椎茸の香りが苦手な人にはおすすめできます。煮物やスープに入れるだけで味わいがかなり広がります。

■ 193
115同様、傘に脈(亀裂)があるのですが、山脈というよりは、川のような広がり方をしています。ニンニクのような香りが特徴の椎茸。加熱してもグニャリとしないので焼いて食べるのがおすすめです。

■ 324
傘の表面色が若干薄い品種で、脈がないものが多いのが特徴です。
ブラックコーヒーのような香りがゆっくりとあがり、後味がすっきりしている品種です。
240同様、煮物やスープ向きですが、特に冷たくしたときの味わいが良いので、佃煮にして冷蔵庫保存したものを食べるのもおすすめです。

スーパーに並ぶ原木椎茸をみると、産地+「冬菇(どんこ)」や「香信(こうしん)」といった椎茸の傘の開き具合で選別し、販売されています。
実は果物のブランドのように椎茸にも個性の異なる複数の品種があるのですが、市場の原木椎茸のほとんどは、産地+傘の開き具合で選別をしているため、それぞれの品種が混ざった状態、しかもどれがどの品種かわからない状態で販売されています。

つまり、その人にとって本当に美味しい、口に合う椎茸が他にあるかもしれない。
椎茸を品種別に食べ比べていただくことで更に深い椎茸の世界を知ってもらいたい。
そう思い今回、椎茸の菌種がわかる、極めてマニアックな干し椎茸セットを作ってみました。

Sliced raw wood shiitake mushrooms grown in Shimanto-cho, Kochi Prefecture, 100% domestically using traditional farming methods.
The shiitake mushrooms are grown without pesticides using sawtooth oak and Japanese oak.
Since it is cut into cubes, it is very satisfying to eat when used in soup.

The members of Shiitake Matsuri Inc, who eat only shiitake mushrooms, select only the highest quality raw wood shiitake mushrooms for this selection. Most of the raw wood shiitake mushrooms are listed only to the place of origin, but we want to clarify the fungus species and classify the flavor of each combination, so that customers can learn more about the world of shiitake mushrooms.

About the flavor classification

■ 115
This is the representative species of the Japan Mushroom Center. It is characterized by its cracked and bumpy umbrella that resembles a mountain range, and the top of each mountain is white as if it were covered with snow. It is thick and is mainly used for steak shiitake.

■ 240
This is the most popular type of shiitake mushroom at the Shiitake Matsuri Inc. It has a blackish color with a rugged surface like a rock. It is characterized by a soft and sweet aroma, and in a sense it is not like shiitake. Therefore, it is recommended for people who do not like the aroma of shiitake mushrooms. Just by adding it to stews or soups, the flavor will expand considerably.

■ 193
Like 115, there are veins (cracks) in the umbrella, but they spread out like a river rather than a mountain range. Shiitake mushrooms are characterized by their garlic-like aroma. It does not become squishy when heated, so it is recommended to eat it grilled.

■ 324
The surface color of the umbrella is slightly lighter, and many of them have no veins.
The aroma is like black coffee, and the aftertaste is clean.
