A typical bacterial species of the Japan Mushroom Center. It features a cracked and bumpy umbrella like a mountain range, and is white as if snow was piled up on the top of each mountain. It is thick and is mainly used for steak shiitake mushrooms. It is recommended to bake it with a good texture and aroma when you eat it.

■ 240
Shiitake mushroom festival recommended Shiitake mushroom species. It has a rugged surface like a rock and a blackish color. It has a soft and sweet scent and is not like shiitake mushrooms in a sense. Therefore, it is recommended for people who are not good at the scent of shiitake mushrooms. Just add it to a simmered dish or soup and the taste will spread considerably.

Like 115, the umbrella has veins (cracks), but it spreads more like a river than a mountain range. Shiitake mushrooms with a garlic-like scent. It doesn't get stuffy even when heated, so it is recommended to bake it.
